Abstract

The present research was conducted in the laboratory of dairy products from the Universidad Nacional de Colombia, Sede Medellín, for 10 weeks (5 corresponding to summer and 5 for winter) took samples of raw milk (fresh) of Holstein cattle. After that was making one of the main dairy products: cheese farmer by enzymatic coagulation, performance percentages with statistical analyzes (with a confidence level of 95%) allowed to differentiate between the two stations, tending to take higher values in summer (15.4% against 15.1% of yield in winter), the average yield obtained are significantly greater with to those reported by several authors. Standardized methods were used by the AOAC and the NTC and performed a design of experiments and ANOVA for analysis of results

El presente trabajo de investigación se realizó en el laboratorio de productos lácteos de la Universidad Nacional de Colombia Sede Medellín, durante 10 semanas (5 correspondientes a verano y 5 correspondientes a invierno) se tomaron muestras de leche cruda (fresca) provenientes de Ganado Holstein y se realizó uno de los principales productos derivados de la leche: queso fresco campesino mediante coagulación enzimática, calculándose porcentajes de Rendimiento quesero para ambas estaciones. Los análisis estadísticos (con un nivel de confianza de 95%) permitieron establecer diferencias entre ambas estaciones, tendiendo a tomar valores superiores en época de verano (15.4% contra 15.1% de Rendimiento en invierno), las medias de Rendimiento obtenidas son significativamente mayores con respecto a las reportadas por diversos autores. Se usaron métodos estandarizados por la AOAC y las NTC y se realizó un diseño de experimentos y ANOVA para el análisis de resultados.
